Goat Cheese salad

I eat goat cheese salad in restaurants all the time, but it never occured to me to make it myself. Possibly because cheese-centered meals are not very popular in my household. This salad was super quick to go throw together. I put some chopped walnuts on the cheese as a quick crust and left it in the oven (and finally under the grill) for 10 minutes or so. Topped it off with a truffle olive oil and white wine vinegar dressing with plenty of honey (and a bit of lemon juice) mixed in. Very tasty.

Onion soup

Original recipe (from the veggie cookbook I got for my birthday)

Ease: Very easy
Time needed: 30 mins
Modifications: None

Easy onion soup, but still pretty tasty. The thing with the floaty cheesy bread bit never quite works out but it makes for a nice lunch!

No-bake cheesecake

Original recipe

A cheesecake that does’t take a day to make? Count me in!

Ease: Easy
Time needed: 1/2 hour + however long you want to leave it in the fridge
Modifications: Speculaas for the crust

This is a sweet little cake, perfect for summer because it’s so fresh, chilled and light. It does feel a bit like eating tremendously light and tasty butter, though. But that means it’s good, right?

Mac and cheese

Now that I’m a full-time non-meateater, I figured I should get some new vegetarian recipes going. I’m not a big Jaimie Oliver fan, but he does have a very nice list of vegetarian recipes. So here we go!

Ease: Medium
Time needed: 1 hour
Modifications: None

Not really a healthy meal, but it is a very nice comfort-food, kind of remeniscent of the pork&tomato macaroni we would make when I was a kid. Yum!

Veggie tajine

Original recipe

We don’t have the real tajine pan but that nice construction basically just comes down to simmering something with the lid on, doesn’t it?

Ease: Easy
Time needed: 1 hour
Modifications: Three color lentils instead of chickpeas (they were out at the store), ground cumin instead of ground seeds

This was nice! I thought the sweet potato was a bit bland but all-together it was a nice quick stew of Moroccan sweetness.
